I had both courgettes and fried eggplants left.
I mixed them together with the pasta and a delicious dish came out!This technique can be used especially if you are in a hurry and maybe cooked on the weekend, frozen and then organized on the menu throughout the week.
Make sure that the same ingredients combined in a different way, always give you different but good dishes.
Pasta with fried vegetables ingredients:
500 g of cherry tomatoes
300 g of pasta
Salt and pepper
extra virgin olive oil
A clove of garlic
Sliced and fried aubergines and courgettes
Diced mozzarella (not to be used for vegan and vegetarian recipes)
Grated Parmesan (not to be used for vegan and vegetarian recipes)
1 Teaspoon of sugar
Fried vegetable pasta procedure:
First I washed, cut the tomatoes in half and cooked in a pan with Evo oil, a clove of garlic, a teaspoon of sugar to remove the acid from the tomatoes. Personally I do not remove seeds or skins if you want to do it, free to try your hand :-D.
Add some water if necessary.
I had, as I said, the courgettes and aubergines already fried in the previous recipes. I mixed them when the cherry tomatoes were ready together with: parmesan, and diced mozzarella. Cooked pasta al dente in abundant salted water and added to the sauce, creamed and served, good appetite Angela.
