I had expiring almond flour, with which I had prepared the macarons, I did not want to prepare them again because they are quite demanding, so I opted for the simpler almond biscuits. My children like them for breakfast, and sometimes they even bring them in school bags for a snack.
Biscuits with almond flour ingredients:
250 g of 00 flour
180 g of sugar
180 g of almond flour
75 gr of butter
Biscuits with almond flour procedure:
Mix all the ingredients taking care to use the softened butter.
Make the pastry dough without mixing too much, spread it on parchment paper and then put it in the fridge for half an hour. Give it the shape you prefer, then bake in the oven at 180 degrees for 10 minutes.
Always keep an eye on the oven because cooking depends on how strong your oven is and how thinly you have rolled out the dough. Leave to cool before serving and close in an airtight container otherwise they will become hard or if the house is damp or soft.
